I grew up in a small town. When I was in 5th grade we moved to the main street, within walking distance of my elementary and junior high schools. One of the best things about that was being able to walk to and from school. A small group of us would meet in the mornings, and a whole gang of us (even friends that lived outside of town) walked home in the afternoons. Our main destination after school was Tony's Pizza. It wasn't the pizza we wanted though. It was the $1 baskets of salt and vinegar french fries. This recipe reminds me of those afternoons hanging out in the red plastic booths with my friends, free of our teachers and parents for an hour. It's easy, delicious, and much better for you than a handful of fries.
I ended up only making half the recipe the first time because I wanted to be sure I liked it before committing to a whole can of chickpeas. If you want to do the same, use the other half for this Back on Track Brown Rice and Chickpea Salad. You'll have a snack and a side dish all ready for the next couple days.
