1. Roasted Zucchini, Black Bean & Goat Cheese Enchiladas
Seriously, the most delicious thing to grace our table in quite a while. There's a little running joke at our dinner table. You see, my love language is words of affirmation, and I crave hearing that what I've set before my hubby (especially when I've worked a bit harder on it) pleases him. He's an eater, without much thought for making noise about what he's eating, so I often have to ask for that affirmation. BUT! This meal was filled with delighted words. He LOVED it. Haven't made it in a few weeks. (He'd eat it weekly.) It's a bit involved, not difficult, just takes a good hour to get it together. It's time to bring it back to the table. Even the leftovers are moan-worthy! (Side note: I love how Sara of Sprouted Kitchen has a print button beneath each recipe. It's the little things!)
2. "The cure for anything is salt water: sweat, tears, the sea." ~Isak Dinesen
3. Elizabeth Mitchell's music for kids
It's music that appeals to kids, but is so pleasant their mamas won't mind listening to it too. Elizabeth sings folksy songs with her husband and daughter, many of which I recognize from my own childhood. Liza has You Are My Little Bird which we love. We just checked Sunny Day out from the library, and it's just as good. Both CD's are fun and soothing to listen to and have been known to keep the grumpies at bay while I'm busy in the kitchen working on lunch or dinner. Her newest album is available to listen to in the sidebar of her website. Listen to a few songs...see what you think.
